Leeks are alliums like onions, garlic, shallots, scallions and chives. They are milder and sweeter than most members of the allium family (their wild cousin, Ramps, being the exception). Chefs and home cooks alike use them as a flavor base for soups and stews, although they can be used in a variety of recipes where a milder onion flavor is desired. Local leeks are just coming into season at the market and are smaller than they will be later in the season. Some people prefer early leeks, though, because the early leeks can be a bit sweeter and cook more quickly. Leeks pair well with most meats, but are exceptional with poultry, pork and fish.
